I realize that having a kale obsession makes me a candidate for being a total vegan stereotype, but I can’t help it. It’s hard for me not to love something that’s sooo nutritious and completely delicious (if prepared right…)
Here are some of the benefits of this lovely gem!
I like kale best steamed, as it’s really hard to digest raw, or blended/juiced. Here’s one of my favorite smoothie recipes that features kale. It’s a great one to start with as it covers the bitterness of the kale without compromising on nutrition!
1 frozen banana
1/2 c. frozen blueberries
1 tbsp. nut butter
1 c. almond milk
3-4 kale leaves
1 tbsp. Chia/flax seeds
honey and lemon to taste
Blend all ingredients in a high powered blender until smooth and voila!
