How to Cook Spaghetti Squash

Spaghetti squash is easily one of my favorite veggies right now. I’ve been making it a lot lately, since it’s easy to prepare and is the perfect nutrient-rich substitute for pasta dishes. Spaghetti squash looks like spaghetti, but has a fraction of the calories and quite a few more health benefits. Plus, it’s delicious. Can’t hate that, right?

To cook the squash, I either use the oven or the microwave. For both methods, slice the squash in half lengthwise and place in a baking dish with a little water covering the bottom.

  • Oven: Set to 375 and cook for 40 minutes.
  • Microwave: Cook 8-10 minutes.

Once the squash is cooked, scoop out the insides and discard the rind. Now, it’s time to get creative! Here are a few of my favorite ways to prepare this delicious gem.

Spaghetti Squash with Marinara:

  • 1/2 spaghetti squash
  • Minced garlic
  • Marinara sauce
  • Fresh basil
  • Sauteed onions and mushrooms

Spaghetti Squash with Hazelnuts:

  • 1/2 spaghetti squash
  • 1 tsp. lemon juice
  • 1 tbsp. olive oil
  • Italian seasoning
  • Salt and pepper, to taste
  • Toasted hazelnuts

I had the latter for lunch today, using almonds instead of hazelnuts. The nice thing about this veggie is how versatile it can be. Any toppings you’d think to put on pasta can apply here. Have fun with it!
