Cleansing Salad

We’ve expressed our love of Pinterest time and time again. While it’s the perfect place to get my fix for a daily dinner recipe, I haven’t actually been home long enough to dig through the endless stacks I keep collecting. I swear there aren’t enough days in the year to get through our recipe collection. I bought all the ingredients for this salad last week because after eating out so much I knew my body needed a slight cleanse (with a glass of white wine on the side of course). It’s quick, light and easy to throw together post a nine mile, heat blazing Portland waterfront run. I put my own spin on it and threw in a few ingredients to heat things up (jalapeno anyone??)

Cleansing Salad

Ingredients:

  • Hand full of washed spinach
  • Diced cucumber (depending on size 1/3 to 1/2 a cucumber– I do 1/2 because I like the added crunch)
  • 12 cherry tomatoes diced in half
  • 1/2 a jalapeno sliced and diced
  • 1/4 cup black beans
  • 1/3 and avocado
  • 2 tbsp diced onion
  • Cilantro to taste (chopped)
  • Pepper to taste

Dressing:

  • 1/2 a squeezed lime
  • 1/2 tbsp of oil ( I go lighter than that but that’s just me, I like the citrus to take over more)

What’s your go-to when you know your body needs a very light and cleansing meal? While this was a welcomed addition, I’m open to suggestions!
